Honey Mustard Pretzel Chicken

 Honey Mustard Pretzel Chicken



Ingredients:
4 cups hard pretzels, coarsely crushed
1/2 cup neutral tasting olive oil
1/2 cup Dijon mustard
1/3 cup clover honey
1/4 cup water
3 tablespoons red wine vinegar
coarse salt and fresh ground black pepper
 boneless chicken breasts

Directions:
1. Preheat the oven to 400° F. Set a wire rack (like an oven-safe cookie rack) over a large rimmed baking sheet.
2. In a food processor pulse the pretzels until coarsely ground (small crumbs with some small pretzel pieces) then add them to a large, shallow bowl. Wipe the crumbs out of the food processor.
3. Add the oil, mustard, honey, water and vinegar to the food processor and pulse until smooth.
4. Season with salt and pepper. Taste and adjust the flavor to suit your own tastes by adding more mustard or honey.
5. Pour half of the dressing into a large shallow bowl and add the chicken breasts. Turn to coat them evenly then dredge them in the pretzel crumbs using your hand to pat them on if needed.
6. Set them on the wire rack and bake 20 – 25 minutes or until cooked through (internal temperature 165 – 174 degrees F.).
7. Let the chicken sit 5 minutes before serving with the remaining honey mustard dressing.

Whole-Wheat Banana Pancakes

My best friend was over this evening and I made us whole-wheat banana pancakes! These are so delicious. I sliced up a strawberry and threw that on top :)
 
 
 
 
Ingredients

  • 2 cups whole-wheat flour (I use King Arthur’s organic white whole-wheat flour)
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 tablespoon honey
  • 2 large eggs, lightly beaten
  • 1 ¾ cups milk
  • 2 tablespoons unsalted butter, melted + butter for frying
  • 2 ripe bananas, mashed
  • 100% pure maple syrup for serving
Instructions
  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. Make a well (hole) in the center of the flour mixture and pour in the honey, eggs, milk, and 2 tablespoons of melted butter. Whisk together thoroughly, but do not overmix.
  3. Gently fold the mashed bananas into the batter with a spatula.
  4. I used my Griddler to make these pancakes. Preheated to 350 degrees and then used a soup ladle to transfer the pancake patter.
  5. When the pancakes have begun to brown on the bottom, flip them over to cook the other side.
  6.  I served our pancakes with pure maple syrup and strawberries on top.
  7. Freeze the leftovers for another day!

Lets Talk Breakfast

 Good morning, everyone!  I am your weekend is off to a great start. Speaking of great starts, you should NEVER skip breakfast, if you want to kick off the day on a positive note. A decent breakfast is going to give you the fuel you need to jump start your day. I know, I know...you say "I know this already," yet so many people begin there days without eating breakfast. This is important, because a big, well-balanced breakfast is going to keep you fuller longer, better focused, and able to eat smaller meals the rest of the day.

Here is what I ate this morning:

 


*Toasted Whole Grain English Muffin
*Cream Cheese
*2 Sliced Strawberries


I paired this with half a grapefruit and a glass of lemon water.

So easy to put together and delicious!

Turkey Stuffed Bell Peppers

I am posting this recipe for a friend! I have not tried this out myself, so you will have to let me know how it turns out. Looks pretty good to me!



Ingredients:
4 bell peppers
1 lb lean ground turkey (preferably ground turkey breast or 97/3%)
1 cup cooked quinoa
3 egg whites
1/2 c chopped scallion
2 tbsp Italian seasoning
2 tsp garlic powder
2 tbsp chopped garlic
1 tsp sea salt
2 tbsp clean jarred tomato sauce

Directions:
1. Preheat oven to 350 degrees F. Cut bell peppers in half, discarding the seeds.
2. In a large bowl, combine turkey, cooked quinoa, egg whites, scallion and seasonings plus 1 tbsp of tomato sauce. Mix well.
3. Stuff each pepper half with the mixture. Top with remaining tomato sauce. Bake for 45 minutes and serve.

Clean Red Beans, Sausage, and Rice

This is what you all have been waiting for...I just know it! This is by far my favorite clean recipe, and my husband would agree. It is filling, delicious, and has a kick to it! Be sure to add these ingredients to your grocery list and put this on the menu next week. You will not be sorry!

Ingredients:
1 1/2 cups Brown Rice
3 cups water
1 tbsp olive oil
1 onion, chopped
3 cloves garlic, chopped
1 lb Organic Turkey Sausage, sliced approximately 1/2 inch rounds
3 cans of red beans, rinsed (I only use one 15 oz can and that is plenty)
1 1/2 c Organic, Low Sodium Chicken Broth
1 tsp cayenne pepper
1 tsp chili powder
1/2 tsp black pepper
1/2 tsp sea salt

Directions:
1. Bring 3 cups of water and 1 1/2 cups Brown Rice to boil in a pot over medium high heat. Once boiling, reduce heat to low, place a lid on pot and let cook for approximately 45 minutes.
2. In a large saute pan, heat 1 tbsp olive oil over medium heat. Once oil is warm, add onion, garlic and organic turkey sausage. Saute until onions brown and become clear.
3. In saute pan, add red beans, organic low-sodium chicken broth, cayenne pepper, chili powder, black pepper and sea salt. Stir together. Cook on medium for 30-45 minutes.

Serve bean/sausage combo over the brown rice and enjoy! Let me know what you think!

Sweet Treat!

Have a sweet tooth? These are absolutely delicious!
 


Ingredients:

4 whole chocolate graham cracker sheets
4 tsp. Naturally More Peanut Butter
1/2 cup frozen fat-free whipped topping , thawed

After putting your grahamwiches together, freeze for 1-2 hours. Then enjoy!

Spicy Baked Shrimp

                   Spicy Baked Shrimp        


My husband and I absolutely love this shrimp! So delicious and so easy to make.

Here is what you will need:

1/2 c. olive oil
2 Tab cajun seasoning
2 Tab fresh lemon juice
2 Tab chopped fresh parsley
1 Tab honey
1 Tab soy sauce
1 teas cayenne pepper
1 lb uncooked large shrimp, shelled, deveined

1. Preheat oven to 450
2. Combine first 7 ingredients in a bowl and then pour into a ziploc bag with the shrimp, toss to coat.  Refrigerate for 1 hour.
3. Place shrimp and marinade in 9x13 baking dish and bake at 450 until cooked, approximately 8 minutes.




FYI: For those of you who are not water drinkers, simply add lime juice to your water for flavor. Absolutely yummy and refreshing :)

Mexican Chicken Casserole

I have really been wanting to try out this recipe, so this is on the menu for tonight. I will start posting some of my favorite clean recipes beginning tomorrow. Be sure to check back!

Mexican Chicken

Mexican Chicken


Servings: 8 servings
Prep Time: 10 min
Cook Time: 30 min
Difficulty: Easy

Ingredients 

1 10 3/4 -ounce can cream of chicken soup
1 10 3/4 -ounce can cheddar cheese soup
1 10 3/4 -ounce can cream of mushroom soup
1 10-ounce can tomatoes
1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken
11 1/2-ounce package flour tortillas
2 cup shredded cheddar cheese

Directions

Preheat oven to 350 degrees.
In a large bowl, stir together the three kinds of soup and the tomatoes. Stir in the chicken.
In a greased 13 x 9- inch pan, layer the tortillas and the chicken mixture, beginning and ending with tortillas. Sprinkle the cheese over the casserole and bake for 30 minutes.

Energizing smoothie!


This was my breakfast this morning :)

Here is what you will need:

Two handfuls of kale, 1 apple, 1 banana, 1 cup of plain Greek yogurt, 5 strawberries, 1 clementine, and some ice. Blend well and enjoy. This will give you tons of energy!

Leftovers Make Life Easier

Tonight I am making leftover Million Dollar Spaghetti Bake from my husband's birthday. I was a bit disappointed that all of the tomato sauce was absorbed into the ground beef mixture. The recipe only called for one 8 oz can of tomato sauce and that was certainly not enough, so for tonight's leftovers I shall add some more sauce and see how that turns out.

Recipe Description

Spicy bean and rice burritos – easy and delicious!

Preparation Instructions

Heat canola oil in a large skillet over medium heat. Add the garlic, chili powder, chipotle, adobo sauce, cumin, and cayenne. Cook briefly until fragrant, about 30-60 seconds. Add in drained and rinsed beans, and water. Bring to a simmer, then lower heat to medium-low and cook for 8 minutes, mashing the bean mixture slightly. Remove from heat, and stir in rice and salsa.
Divide mixture evenly down the center of each tortilla. Top with cheese, lettuce, green onions, and Greek yogurt. Roll up, and serve!

Ingredients

  • FOR THE FILLING:
  • 1 Tablespoon Canola Oil
  • 2 cloves Garlic, Minced
  • 1 teaspoon Chili Powder
  • 1 whole Pepper From A Can Of Chipotles In Adobo, Minced
  • 1 Tablespoon Sauce From A Can Of Chipotles In Adobo
  • 1 teaspoon Ground Cumin
  • 4 dashes Cayenne Pepper
  • 1 can Pinto Beans, Drained And Rinsed, 15 Ounce Can
  • 1 can Black Beans, Drained And Rinsed (15 Ounce Can)
  • ⅓ cups Water
  • 2 cups Brown Rice, Cooked According To Package Instructions
  • ¼ cups Fresh Salsa
  • FOR THE TACO ASSEMBLY:
  • 6 whole Tortillas, Burrito Sized, Warmed
  • 8 ounces, weight Shredded Cheese
  • 3 cups Shredded Lettuce, More As Desired
  • 4 whole Green Onions, Chopped
  • 8 ounces, fluid Fat Free Greek Yogurt

Hi, y'all! I hope you are all having a good morning thus far. Today is the first day of my Spring semester grad classes, so before my life gets crazy again, I want to share as much with you as time allows. I completed my first discussion board for one of my courses this morning, and decided I needed a little breakfast. I threw together a strawberry banana smoothie...yum!

Here is what you will need:







*One whole banana sliced
*Approximately 6 strawberries
*plain almond milk
*dash of cinnamon
*dash of nutmeg
* 3 ice cubes

Why I Choose to Eat Clean

Welcome to the House of Eaton! For those of you who do not know me, my name is Alicia Eaton and I am definitely a foodie. I also enjoy living a healthy lifestyle, and for the past several months I have been on the journey of eating clean. If you are not familiar with clean eating, that simply means staying away from ALL foods that are processed. I was driven to take on this endeavor due to the fact that I have been struggling with painful, gastrointestinal issues for the last 13 years of my life. Eating clean is dramatically changing my life, and I feel great. I can finally leave the house without worrying when my next stomach upset might arise. I can honestly say that I feel like I have more control over an area of my life that I thought might never be resolved. After dozens of visits to numerous doctors and specialists, and many visits to the ER, I no longer allow doctors to just shove pill after pill down my throat. If the remedy is not natural, than it is not going into my body.

 I created this blog, so that I can share tons of recipes with all of you lovely people. I will be sure to include all of my favorite clean eat recipes, in hopes that I might be able to help you change old habits and start your journey to a healthier, new you. My blog will never be about how much weight you can lose, but how you can be healthy. Beauty comes in all sizes and just because a person is skinny, does not automatically mean that they are healthy. I can promise you that eating clean does not mean eating foods that taste bad, rather it means just the opposite. The meals that I cook are absolutely mouth-watering and you will want to savor every last bite. My husband loves eating clean just as much as I do. I will tell you that not every meal that I post on here will be a clean eat, but I will be sure to put it in parentheses indicating that it is such.

Today is my husband's birthday, so I will be making a baked spaghetti for dinner. Here is the recipe below for all you to try out at home. Enjoy!


Million Dollar Spaghetti

Ingredients

  • 7 oz. pkg. thin spaghetti noodles
  • 1 tsp. butter
  • 1 1/2 lbs. ground beef
  • salt and pepper
  • 1 tsp. minced green pepper
  • 8 oz. pkg. cream cheese
  • 1/4 c. sour cream
  • 8 oz. cottage cheese
  • 1/3 c. onion
  • 2 tsp. melted butter
  • 8 oz. can tomato sauce

directions

  • 1
    1. Cook spaghetti noodles and drain. Saute beef in butter until brown, then add onions, green peppers, salt, pepper and tomato sauce. Remove from heat.

    2.Combine cheeses and sour cream.

    3. Using a 2 quart casserole dish, spread half of spaghetti noodles, cover with cheese and then cover with meat sauce and add remaining noodles to the top.

    4. Pour melted butter over spaghetti noodles then spread remaining meat sauce over the top.

    5. Bake at 325-350 for about 30 minutes.
